Easter Rabbit

A delicious treat for your cat this Spring

With the coming of spring, rabbits will undoubtedly be on your cat’s mind – and quite possibly in his mouth if he gets half a chance. This delicious rabbit recipe is the ideal way to satisfy his springtime urge for rabbit, without having to put up with a half-dead animal being dragged in through the cat flap and deposited proudly on the living room carpet!

To make enough to keep even the most rabbit-crazy cat satisfied for several weeks, you’ll need:

• 1 small rabbit, quartered
• 3 slices of bacon, cut into thirds
• 1 carrot, grated
• 3 tablespoons flour
• ½ pint beef stock (from stock cube if you don’t have fresh)
• 1 teaspoon dried thyme
• 2 teaspoons dried parsley
• 1 teaspoon dried catnip

Fry the bacon for a few minutes until cooked and remove from the pan and set aside for another use (bacon salad? A nice bacon sarnie?). Then cook the grated carrot in the bacon fat left behind – for extra flavour – before adding in the rabbit pieces. Continue to fry until the rabbit is golden brown. Then sprinkle on the flour to cover the rabbit and continue to cook for another five minutes or so.

Add in the beef stock and herbs and simmer for about an hour. Allow to cool completely and remove all the bones (very important to get all of them out, otherwise you could be spending Easter Monday at the vets).

Serve with some rice or mashed potatoes, and store what you don’t use in the fridge for up to 5 days, or the freezer for a few months.
